Before you carve

A few things to know.

Are these pumpkins or bell peppers?

Orange bell peppers! They are the edible little jack-o'-lanterns that hold your filling. Small faces leave more pepper in place to keep the filling inside.

Do I carve the face before or after cooking?

Carve the pepper while it is raw, after removing the top and seeds. Keep the cutouts small. The full recipe should guide the cooked filling and final bake so the pepper becomes tender while still holding its shape.
