Quick Grocery List
Step-by-Step
  1. 0-5 min: Heat the oven and set up. Preheat oven to 400°F (205°C). If your rice isn't cooked yet, start that first according to package directions. Lightly grease your baking dish and set it near the stove. Gather all ingredients so they're within reach.
  2. 5-10 min: Season the rice and build the base. In a medium bowl, mix rice vinegar, sugar, and salt. Microwave for 10-15 seconds and stir until mostly dissolved. Add your warm cooked rice to a large bowl and gently fold in the vinegar mixture until evenly seasoned. Spread the seasoned rice into an even layer in the baking dish. Don't pack it down too hard - you want it slightly fluffy.
  3. 10-15 min: Make the sushi mix. In a large mixing bowl, add shredded crab, cream cheese, Kewpie mayo, sriracha, soy sauce, lemon juice, green onions, and crumbled nori (if using). Mix until creamy and well combined but still a little chunky. Taste and adjust with a touch more soy or lemon if needed.
  4. 15-18 min: Assemble the bake. Spoon the sushi mix over the rice base and spread into an even layer, all the way to the edges. Sprinkle furikake evenly over the top, then add a light, even layer of shredded mozzarella.
  5. 18-32 min: Bake until bubbly and golden. Transfer the dish to the oven and bake for 12-15 minutes, until the cheese is melted and the edges of the topping look a little crisp. If you want more color, switch to broil for 1-2 minutes at the end - watch closely so it doesn't burn.
  6. While it bakes: Prep the "scoopables." Slice the cucumber into thin rounds or sticks. Slice the avocado right before serving so it stays green. Arrange cucumber, avocado, and nori sheets on a platter next to where you'll serve the bake.
  7. 32-35 min: Finish and serve. Remove the sushi bake from the oven and let it sit for 3-5 minutes so it sets slightly. Drizzle generously with Kewpie mayo and sriracha or spicy mayo, then finish with a bit more furikake. To eat, scoop some of the bake with a spoon onto a piece of nori or cucumber slice, add a bit of avocado, and enjoy like a little sushi taco.
BiteTalk Boost
  • Use slightly warm rice when you season it - it absorbs the vinegar mix more evenly and tastes closer to real sushi rice.
  • If you like it spicier, mix extra sriracha or a little wasabi into the crab mixture and the finishing drizzle so the heat is layered, not overwhelming.
  • Let the bake rest a few minutes before scooping. It'll hold together better on each piece of nori and photograph cleaner for your socials.
Store & Reheat

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat portions gently in a 300°F (150°C) oven or in the microwave until warmed through. Add fresh avocado, cucumber, and nori on the side when serving again - those are best prepped fresh.
